data-start=\"1505\" data-end=\"1568\">Mine happened almost thirty years ago, while I was living in London.<\/p><p data-start=\"1570\" data-end=\"1632\">For as long as I could remember, I&#8217;d lived data-end=\"1689\">Medication.<\/p><p data-start=\"1678\" data-end=\"1689\">It had become so normal that I assumed it was simply part of who I was.<\/p><p data-start=\"1745\" data-end=\"1801\">Until one doctor asked a different question.<\/p><p data-start=\"1803\" data-end=\"1830\">And changed the way I ate forever.<\/p><p data-start=\"1832\" data-end=\"1931\">He removed gluten, dairy and several other foods from my diet.<\/p><p data-start=\"1933\" data-end=\"1969\">Almost overnight, my health improved.<\/p><p data-start=\"1971\" data-end=\"2003\">But something else disappeared too.<\/p><p data-start=\"2005\" data-end=\"2062\">A great deal of the joy I had always found in food.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-3995860 elementor-widget elementor-widget-text-editor\" data-id=\"3995860\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h2><strong>When food stops being about sharing<\/strong><\/h2>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element data-end=\"2140\">Today it&#8217;s difficult to imagine what that meant.<\/p><p data-start=\"2142\" data-end=\"2183\">There was no Google.<\/p><p data-start=\"2185\" data-end=\"2209\">No social media.<\/p><p data-start=\"2211\" data-end=\"2244\">No food blogs.<\/p><p data-start=\"2246\" data-end=\"2277\">Hardly any gluten-free products.<\/p><p data-start=\"2279\" data-end=\"2363\">The tiny free-from shelf at the supermarket was disappointing at best.<\/p><p data-start=\"2365\" data-end=\"2442\">At the time, I was working in a beautiful French p\u00e2tisserie in Chelsea.<\/p><p data-start=\"2444\" data-end=\"2527\">Every morning we prepared some of the most exquisite pastries I&#8217;d ever seen.<\/p><p data-start=\"2529\" data-end=\"2571\">And I couldn&#8217;t eat almost any of them.<\/p><p data-start=\"2573\" data-end=\"2628\">That&#8217;s when I realised something I&#8217;ve never forgotten.<\/p><p data-start=\"2630\" data-end=\"2666\">Food is never just food.<\/p><p data-start=\"2668\" data-end=\"2683\">It&#8217;s celebration.<\/p><p data-start=\"2685\" data-end=\"2696\"><strong><a href=\"https:\/\/milola.com\/en\/our-philosophy\/\">Family<\/a><\/strong>.<\/p><p data-start=\"2698\" data-end=\"2709\">Friendship.<\/p><p data-start=\"2711\" data-end=\"2722\">Culture.<\/p><p data-start=\"2724\" data-end=\"2734\">Travel.<\/p><p data-start=\"2736\" data-end=\"2746\">Care.<\/p><p data-start=\"2748\" data-end=\"2839\">And when you can&#8217;t fully take part in those moments, it doesn&#8217;t simply feel like you&#8217;ve changed your diet.<\/p><p data-start=\"2841\" data-end=\"2893\">It feels as though you&#8217;ve been left out of something much bigger.<\/p><p><em><img class=\"PDq2pG_selectionAnchorContainer\" data-start=\"2918\" data-end=\"2960\">I became obsessed with learning.<\/p><p data-start=\"2962\" data-end=\"3028\">I spent hours in libraries trying to understand what gluten actually was.<\/p><p data-start=\"3030\" data-end=\"3107\">I wandered through London&#8217;s markets discovering ingredients I&#8217;d never encountered before.<\/p><p data-start=\"3109\" data-end=\"3164\">I realised the world was so much bigger than wheat.<\/p><p data-start=\"3166\" data-end=\"3203\"><strong><a href=\"https:\/\/es.wikipedia.org\/wiki\/Sorghum\">Sorghum<\/a><\/strong> in Indian cooking.<\/p><p data-start=\"3205\" data-end=\"3253\">Millet and quinoa in Latin American cuisine.<\/p><p data-start=\"3255\" data-end=\"3288\"><strong><a href=\"https:\/\/es.wikipedia.org\/wiki\/Eragrostis_tef\">Teff<\/a><\/strong> in Ethiopian food.<\/p><p data-start=\"3290\" data-end=\"3309\">Buckwheat.<\/p><p data-start=\"3311\" data-end=\"3322\">Tapioca.<\/p><p data-start=\"3324\" data-end=\"3336\">Psyllium.<\/p><p data-start=\"3338\" data-end=\"3362\">Then came the experiments.<\/p><p data-start=\"3364\" data-end=\"3385\">There were plenty of failures.<\/p><p data-start=\"3387\" data-end=\"3398\">More than I can count.<\/p><p data-start=\"3400\" data-end=\"3485\">But slowly, something began to change.<\/p><p data-start=\"3487\" data-end=\"3517\">The recipes no longer felt like substitutes.<br\/><br\/>They were simply&#8230; delicious.<\/p><p different.<\/p><p data-start=\"3782\" data-end=\"3814\">Without explaining yourself.<\/p><p data-start=\"3816\" data-end=\"3840\">Without compromising.<\/p><p data-start=\"3842\" data-end=\"3890\">Without settling for a second-rate version of what everyone else was enjoying.<\/p><p data-start=\"3892\" data-end=\"3909\">That&#8217;s how Milola began.<\/p><p data-start=\"3911\" data-end=\"3941\">Not as a cookie brand.<\/p><p data-start=\"3943\" data-end=\"3965\">Not as a bakery.<\/p><p data-start=\"3967\" data-end=\"3986\">But as an idea.<\/p><p data-start=\"3988\" conversation happened around the table.<\/p><p data-start=\"4190\" data-end=\"4229\">Where cooking was an act of love.<\/p><p data-start=\"4231\" data-end=\"4269\">And sharing food was simply how we cared for one another.<\/p><p data-start=\"4271\" data-end=\"4353\">That&#8217;s why I&#8217;ve never believed we have to choose between wellbeing and pleasure.<\/p><p data-start=\"4355\" data-end=\"4405\">I believe the two belong together.<\/p><p data-start=\"4407\" data-end=\"4492\">It&#8217;s the question that still guides every recipe we create.<\/p><p data-start=\"4494\" Mine happened almost thirty years ago, while I was living in London. For as long as I could remember, I&#8217;d lived with fragile health. Allergies. Digestive problems. Constant discomfort. Medication. It had become so normal that I assumed it was simply part of who I was. Until one doctor asked a different question. And changed the way I ate forever. He removed gluten, dairy and several other foods from my diet. Almost overnight, my health improved. But something else disappeared too. A great deal of the joy I had always found in food. When food stops being about sharing Today it&#8217;s difficult to imagine what that meant. There was no Google. No social media. No food blogs. Hardly any gluten-free products. The tiny free-from shelf at the supermarket was disappointing at best. At the time, I was working in a beautiful French p\u00e2tisserie in Chelsea. Every morning we prepared some of the most exquisite pastries I&#8217;d ever seen. And I couldn&#8217;t eat almost any of them. That&#8217;s when I realised something I&#8217;ve never forgotten. Food is never just food. It&#8217;s celebration. Family. Friendship. Culture. Travel. Care. And when you can&#8217;t fully take part in those moments, it doesn&#8217;t simply feel like you&#8217;ve changed your diet. It feels as though you&#8217;ve been left out of something much bigger. Starting again I became obsessed with learning. I spent hours in libraries trying to understand what gluten actually was. I wandered through London&#8217;s markets discovering ingredients I&#8217;d never encountered before. I realised the world was so much bigger than wheat. Sorghum in Indian cooking. Millet and quinoa in Latin American cuisine. Teff in Ethiopian food. Buckwheat. Tapioca. Psyllium. Then came the experiments. There were plenty of failures. More than I can count. But slowly, something began to change. The recipes no longer felt like substitutes. They were simply&#8230; delicious. The idea that became Milola Eventually I realised I wasn&#8217;t trying to make gluten-free food. I was trying to recover something much more important. The feeling of sitting around a table without feeling different. Without explaining yourself. Without compromising. Without settling for a second-rate version of what everyone else was enjoying. That&#8217;s how Milola began. Not as a cookie brand. Not as a bakery. But as an idea. To create a place where everyone belongs around the table. Mediterranean at heart I was born on the Mediterranean coast. In a family where every meaningful conversation happened around the table. Where cooking was an act of love. And sharing food was simply how we cared for one another. That&#8217;s why I&#8217;ve never believed we have to choose between wellbeing and pleasure. I believe the two belong together.
