Discovering everything else can be an opportunity. <\/h1>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-55d6fb6 e-con-full e-flex wpr-particle-no wpr-jarallax-no wpr-parallax-no wpr-sticky-section-no wpr-column-slider-no wpr-equal-height-no e-con e-parent\" data-id=\"55d6fb6\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-a26ac39 elementor-widget elementor-widget-text-editor\" data-id=\"a26ac39\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400\">For centuries, we\u2019ve treated one possibility as though it were the only one.<\/span><\/p><p><span style=\"font-weight: 400\">Wheat has shaped some of the foods we love most: bread, pasta, cakes, biscuits. <\/span><\/p><p><span style=\"font-weight: 400\">It is deeply woven into our food culture, our kitchens and the way we think about what we eat.<\/span><\/p><p><span style=\"font-weight: 400\">So much so that we\u2019ve come to see it as the natural starting point, almost without asking why.<\/span><\/p><h5><i>And yet, there has always been so much more.<\/i><\/h5><p><span style=\"font-weight: 400\">Almonds, hazelnuts, oats, rice, corn, buckwheat, millet, quinoa, sorghum, teff, tapioca, potatoes, seeds, pulses. <\/span><\/p><p><span style=\"font-weight: 400\">Ingredients with flavours, textures and possibilities of their own. Oats  <\/span><i><span style=\"font-weight: 400\">instead of<\/span><\/i><span style=\"font-weight: 400\"> wheat. Buckwheat  <\/span>as a substitute for wheat.<\/p><h5><i>Almost without noticing, we\u2019ve created a hierarchy.<\/i><\/h5><p><span style=\"font-weight: 400\">First comes the ingredient we consider normal.<\/span><\/p><p><span style=\"font-weight: 400\">Then comes everything else.<\/span><\/p><p><b>The substitutes. The alternatives. The versions made for people who can\u2019t eat the usual thing.  <\/b><\/p><p><span style=\"font-weight: 400\">But an almond was never meant to replace a grain of wheat.<\/span><\/p><p><span style=\"font-weight: 400\">Neither were oats. Or rice. Or corn. Or hazelnuts.   <\/span><\/p><h5><i>Each has its own flavour, its own texture and its own way of behaving in the kitchen.<\/i><\/h5><p><span style=\"font-weight: 400\">Perhaps we start losing possibilities precisely when we ask them to be something else.<\/span><\/p><p> <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-6b072a2 elementor-widget elementor-widget-text-editor\" data-id=\"6b072a2\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h2><b>Cooking with what\u2019s there, not what\u2019s missing<\/b><\/h2>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-d60b1ff elementor-widget elementor-widget-text-editor\" data-id=\"d60b1ff\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400\">When we have to remove an ingredient from a recipe, our first instinct is often to recreate exactly what we had before.<\/span><\/p><p><em><span style=\"font-weight: 400\">How do I make this cake without wheat?<\/span><\/em><\/p><p><em><span style=\"font-weight: 400\">How do I get the texture I want from this biscuit?<\/span><\/em><\/p><p><em><span style=\"font-weight: 400\">How do I replace what\u2019s missing?<\/span><\/em><\/p><p><span style=\"font-weight: 400\">It\u2019s understandable. And often necessary. <\/span><\/p><p><b>But it doesn\u2019t have to be the end of the creative process.<\/b><\/p><p><span style=\"font-weight: 400\">Because once we\u2019ve asked how to replace it, we can ask a much more interesting question:<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-b442ad9 elementor-widget elementor-widget-text-editor\" data-id=\"b442ad9\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h5 class=\"p1\">What can I create with these ingredients that I couldn\u2019t create in quite the same way with wheat?<\/h5>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-699ffd1 elementor-widget elementor-widget-text-editor\" data-id=\"699ffd1\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400\">Almonds bring moisture, density and an almost buttery richness.<\/span><\/p><p><span style=\"font-weight: 400\">Hazelnuts add depth and an unmistakable toasted flavour.<\/span><\/p><p><span style=\"font-weight: 400\">Oats can bring softness and a comforting texture.<\/span><\/p><p><span style=\"font-weight: 400\">Corn has sweetness, character and an identity all its own.<\/span><\/p><p><span style=\"font-weight: 400\">Buckwheat \u2014 which, despite its name, isn\u2019t wheat at all \u2014 has a distinctive, slightly earthy flavour.<\/span><\/p><p><span style=\"font-weight: 400\">Rice brings lightness.<\/span><\/p><p><span style=\"font-weight: 400\">Seeds can transform a texture completely.<\/span><\/p><p><span style=\"font-weight: 400\">And pulses open up even more possibilities.<\/span><\/p><p><b>When we start looking at ingredients this way, we stop cooking only in response to what\u2019s missing.<\/b><\/p><h5><span style=\"font-weight: 400\">We start cooking for what\u2019s possible.<\/span><\/h5><p><img decoding=\"async\" class=\"aligncenter size-large wp-image-10500\" way<\/b><\/h2>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c75c5a6 elementor-widget elementor-widget-text-editor\" data-id=\"c75c5a6\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400\">There\u2019s nothing new about this idea.<\/span><\/p><p><strong>We only need to look beyond our own corner of the culinary world.<\/strong><\/p><p><span style=\"font-weight: 400\">For centuries, food cultures around the world have cooked with rice, corn, cassava, chickpeas, lentils, nuts, seeds and other grains without thinking of what they made as an alternative version of anything.<\/span><\/p><p><span style=\"font-weight: 400\">A corn tortilla isn\u2019t trying to be bread.<\/span><\/p><p><span style=\"font-weight: 400\">Socca, made from chickpea flour, doesn\u2019t need to justify the fact that it contains no wheat.<\/span><\/p><p><span style=\"font-weight: 400\">Polenta isn\u2019t an incomplete version of something else.<\/span><\/p><p><span style=\"font-weight: 400\">Macarons owe their character not to what they lack, but to the almonds they contain.<\/span><\/p><h5>These are foods with identities of their own.<\/h5><p><span style=\"font-weight: 400\">And perhaps there\u2019s something worth learning from that.<\/span><\/p><p><span style=\"font-weight: 400\">Expanding the way we eat doesn\u2019t always require new ingredients.<\/span><\/p><p><b>Sometimes it simply means seeing familiar ones differently.<\/b><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-1ef1792 elementor-widget elementor-widget-text-editor\" data-id=\"1ef1792\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h2><b>When limitations open up possibilities<\/b><\/h2>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-9f4ba3d elementor-widget elementor-widget-text-editor\" data-id=\"9f4ba3d\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400\">Food restrictions are often described in terms of loss.<\/span><\/p><p><strong><em>I can\u2019t eat this.<\/em><\/strong><\/p><p><strong><em>I have to avoid that.<\/em><\/strong><\/p><p><strong><em>That\u2019s no longer for me.<\/em><\/strong><\/p><p><span style=\"font-weight: 400\">That reality is real. There\u2019s no point pretending otherwise. <\/span><\/p><p><span style=\"font-weight: 400\">But it doesn\u2019t have to be the whole story.<\/span><\/p><p><b>It can also take us beyond habits we had never thought to question.<\/b><\/p><p><span style=\"font-weight: 400\">Trying new ingredients. Understanding how they work. Exploring different combinations. Discovering textures we might never have found if we had simply carried on doing things the way we always had.   <\/span><\/p><p><span style=\"font-weight: 400\">Not because a limitation is something to wish for.<\/span><\/p><p><b>But because creativity often appears when the usual answer no longer works.<\/b><\/p><p><span style=\"font-weight: 400\">In<\/span> <a href=\"https:\/\/milola.com\/en\/the-generous-table\/\"><i><a href=\"https:\/\/milola.com\/en\/the-generous-table\/\">The Generous Table, <\/a><\/i><\/a>we asked a question:<span style=\"font-weight: 400\"><\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ab724c5 elementor-widget elementor-widget-text-editor\" data-id=\"ab724c5\" trying to recreate what\u2019s missing, we looked for ingredients, flavours and textures capable of creating something extraordinary in their own right?<\/i><\/b><\/h5>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-e819825 elementor-widget elementor-widget-text-editor\" data-id=\"e819825\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400\">This is one possible answer.<\/span><\/p><p><span style=\"font-weight: 400\">Not stopping at substitution.<\/span><\/p><p><b>But starting to think about the ingredient itself.<\/b><\/p><p><img \u201calmost the same\u201d version<\/b><\/h2>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f0b1f30 elementor-widget elementor-widget-text-editor\" data-id=\"f0b1f30\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>There\u2019s a world of difference between creating something whose greatest achievement is that you\u2019d never know it didn\u2019t contain wheat and creating something people would choose again even if they could eat absolutely anything.<\/p><p><span style=\"font-weight: 400\">The second is much harder.<\/span><\/p><p><strong>But it\u2019s also much more interesting.<\/strong><\/p><p><span style=\"font-weight: 400\">Because then the goal is no longer to compensate for something.<\/span><\/p><p><span style=\"font-weight: 400\">The goal becomes what it should always have been:<\/span><\/p><h5><i>to make something genuinely delicious.<\/i><\/h5><p><span style=\"font-weight: 400\">A biscuit can be extraordinary because of the combination of hazelnuts and chocolate.<\/span><\/p><p><span style=\"font-weight: 400\">A cake might get precisely the moisture and texture that make it special from almonds.<\/span><\/p><p><span style=\"font-weight: 400\">A seed might provide exactly the contrast a recipe needed.<\/span><\/p><p><span style=\"font-weight: 400\">We don\u2019t have to hide these ingredients behind the things they\u2019re supposed to replace.<\/span><\/p><p><strong>We can let them take centre stage.<\/strong><\/p><p><span style=\"font-weight: 400\">And when we do, something important happens.<\/span><\/p><p><span style=\"font-weight: 400\">Food stops being divided into the normal version and the version made for someone else.<\/span><\/p><p><b>It simply becomes food again.<\/b><\/p><p><img loading=\"lazy\" Discovering everything else can be an opportunity. For centuries, we\u2019ve treated one possibility as though it were the only one. Wheat has shaped some of the foods we love most: bread, pasta, cakes, biscuits. It is deeply woven into our food culture, our kitchens and the way we think about what we eat. So much so that we\u2019ve come to see it as the natural starting point, almost without asking why. And yet, there has always been so much more. Almonds, hazelnuts, oats, rice, corn, buckwheat, millet, quinoa, sorghum, teff, tapioca, potatoes, seeds, pulses. Ingredients with flavours, textures and possibilities of their own. They don\u2019t need to resemble wheat to earn their place in our kitchens. Perhaps we just needed to start looking at them differently. When everything else becomes an alternative There\u2019s something curious about the way we talk about ingredients. We talk about almond flour instead of wheat flour. Oats instead of wheat. Buckwheat as a substitute for wheat. Almost without noticing, we\u2019ve created a hierarchy. First comes the ingredient we consider normal. Then comes everything else. The substitutes. The alternatives. The versions made for people who can\u2019t eat the usual thing. But an almond was never meant to replace a grain of wheat. Neither were oats. Or rice. Or corn. Or hazelnuts. Each has its own flavour, its own texture and its own way of behaving in the kitchen. Perhaps we start losing possibilities precisely when we ask them to be something else. Cooking with what\u2019s there, not what\u2019s missing When we have to remove an ingredient from a recipe, our first instinct is often to recreate exactly what we had before. How do I make this cake without wheat? How do I get the texture I want from this biscuit? How do I replace what\u2019s missing? It\u2019s understandable. And often necessary. But it doesn\u2019t have to be the end of the creative process. Because once we\u2019ve asked how to replace it, we can ask a much more interesting question: What can I create with these ingredients that I couldn\u2019t create in quite the same way with wheat? Almonds bring moisture, density and an almost buttery richness. Hazelnuts add depth and an unmistakable toasted flavour. Oats can bring softness and a comforting texture. Corn has sweetness, character and an identity all its own. Buckwheat \u2014 which, despite its name, isn\u2019t wheat at all \u2014 has a distinctive, slightly earthy flavour. Rice brings lightness. Seeds can transform a texture completely. And pulses open up even more possibilities. When we start looking at ingredients this way, we stop cooking only in response to what\u2019s missing. We start cooking for what\u2019s possible. Wheat was never the only way There\u2019s nothing new about this idea. We only need to look beyond our own corner of the culinary world. For centuries, food cultures around the world have cooked with rice, corn, cassava, chickpeas, lentils, nuts, seeds and other grains without thinking of what they made as an alternative version of anything. A corn tortilla isn\u2019t trying to be bread. Socca, made from chickpea flour, doesn\u2019t need to justify the fact that it contains no wheat. Polenta isn\u2019t an incomplete version of something else. Macarons owe their character not to what they lack, but to the almonds they contain. These are foods with identities of their own. And perhaps there\u2019s something worth learning from that. Expanding the way we eat doesn\u2019t always require new ingredients. Sometimes it simply means seeing familiar ones differently. When limitations open up possibilities Food restrictions are often described in terms of loss. I can\u2019t eat this. I have to avoid that. That\u2019s no longer for me. That reality is real. There\u2019s no point pretending otherwise. But it doesn\u2019t have to be the whole story. It can also take us beyond habits we had never thought to question. Trying new ingredients. Understanding how they work. Exploring different combinations. Discovering textures we might never have found if we had simply carried on doing things the way we always had. Not because a limitation is something to wish for. But because creativity often appears when the usual answer no longer works. In The Generous Table, we asked a question: What if, instead of trying to recreate what\u2019s missing, we looked for ingredients, flavours and textures capable of creating something extraordinary in their own right? This is one possible answer. Not stopping at substitution. But starting to think about the ingredient itself. We don\u2019t want an \u201calmost the same\u201d version There\u2019s a world of difference between creating something whose greatest achievement is that you\u2019d never know it didn\u2019t contain wheat and creating something people would choose again even if they could eat absolutely anything. The second is much harder. But it\u2019s also much more interesting. Because then the goal is no longer to compensate for something. The goal becomes what it should always have been: to make something genuinely delicious. A biscuit can be extraordinary because of the combination of hazelnuts and chocolate. A cake might get precisely the moisture and texture that make it special from almonds. A seed might provide exactly the contrast a recipe needed. We don\u2019t have to hide these ingredients behind the things they\u2019re supposed to replace. We can let them take centre stage. And when we do, something important happens. Food stops being divided into the normal version and the version made for someone else. It simply becomes food again.
